How do you get those nice labels on your aircraft? I stumbled across a VRS site that was displaying those gray rounded boxes. I cannot find an example of setting that up.

To get the information showing under the aircraft icon on the map:

Menu -> Options -> Aircraft

Then under the 'Aircraft Display' section you can choose how many lines of info you want to show (e.g. registration, aircraft type, etc)

I already have four lines for labels on my aircraft. What I am curious about is the image the OP posted that shows the labels contained in gray boxes with rounded edges. Looks very nice and I came across a site doing that.

The grey box thing can be achieved by setting VRS.globalOptions.aircraftMarkerSuppressTextOnImages to true. However you will need to add some styling for the box, the default box comes out centered under the anchor point with no rounded corner. Also your style has to force a margin if you don't want the box centered directly under the icon.
